Peaches + Bubbles = Happy

Our first peach bellini experience was with a premixed concoction sold at our local “world goody” store. We found that it had the ability to turn a decent bottle of champagne or sparkling white wine depending where your bubbly is from into a wonderful experience that just makes you say, “Yeah, I’ll take another one.” It’s a great cocktail to mark an occasion, like the bringing together of families for my sister Kari’s wedding, successfully making it through the DMV’s office because you remembered your insurance card and proof of the previous year’s property tax payment, or because it’s Tuesday. We love trying new things and then making our own version, so that’s what we did, and here’s how it went.
